BaxterStorey are thrilled to welcome Gary O’Hanlon as Culinary Director. Joining us from the Good Hotel Guide ‘Hotel of the Year 2018’ Viewmount House where Gary was Head Chef for over ten years, he brings his unique style of fine dining together with a wealth of experience, creativity and knowledge to the business.
Gary was born in Ramelton, Co. Donegal on the shores of Lough Swilly where from the age of four he was immersed in the food world working alongside his father and brothers picking peri-winkles, mussels and oysters for some of the finest restaurants in France. This love of food saw him seek out a career as a professional chef from the age of 14 at the Rosapenna Hotel, Downings, Co Donegal.
After stints in the Stormont Hotel in Belfast and La Cave in Dublin, it was onto Devlin’s Restaurant in Boston where he honed his skills fusing his classical French training with modern techniques. The result was a repertoire of modern classic dishes which he then brought to the kitchens of Viewmount House when he returned to Ireland over ten years ago.
This style of food saw Gary named Food & Wine Magazine’s ‘Best Chef Leinster 2016’, RAI ‘Best Chef Leinster 2014 & 2017’, The Georgina Campbell ‘Restaurant of the Year’ recipient, culminating in the prestigious Georgina Campbell ‘Hospitality Hero Award 2018’ for services to Irish Food.
BaxterStorey’s ethos of high quality, local and seasonal produce matches that of Gary’s and together they plan on taking the business to the next level. “In making the decision to come on board with Baxterstorey Ireland, it was imperative that our views on food, farming, hospitality and dedication to service of the highest order were on a par.”
At BaxterStorey, our teams are at the centre of everything we do and Gary believes our people are the heartbeat of our business “I want to pave the way for the best young chefs in Ireland and beyond to join the Baxterstorey business and to bring a fine dining mentality into the minds of all our chefs. Food, Flavour, Finesse.’
Gary’s profile brings a strong media presence to BaxterStorey. As well as being a resident Chef on TV3’s ‘The Restaurant’ and the upcoming RTE series ‘Healthy Appetites’ he also has a weekly food slot on Newstalk and is a regular columnist in the Irish Times.
